The first step is to prepare the mixture of your ice cream. The ingredients to make around two gallons of ice cream are the following: 1/2 kg white sugar, 1/4 kg Skimmed milk, 1/4 kg Butter milk powder, 300 g Cassava flour, Pandan leaves, 3.5 kg Table salt, 2 whole Egg yolks, 1 can 300ml Condensed milk, a pouch of 300g Cream, 1/4 bar Cheese or chocolate, 1/2 kg Grated coconut, 1 tbsp food color (egg yellow), 1.5 tbsp Vanilla, 4 tsp or 34.5ml rhum or brandy, and 1/8 ice block.
Place a deep baking bowl made from plastic, stainless steel or anything sturdy in the freezer, and transfer your custard mixture in it. Place it in the freezer for 45 minutes. As it begins to solidify close to the edges, take it away from the freezer and stir it using spatula or whisk. Go on with monitoring the mixture for every 30 minutes, with vigorous stirring as it’s freezing. Continue checking it from time to time and with stirring as it freezes until the ice cream becomes frozen. This whole process can take 2-3 hours. Transport the ice cream to a enclosed storage container in anticipation of being ready to serve.
